This highball style cocktail is bursting with layers of flavor and complexity. At first you are met with the refreshingly bright aroma of peach and mint. Followed by the the fruity tang of the cocktail shrub and effervescence of dry cider.
· 1 oz Rieger’s Gin
· ¾ oz cocktail shrub
· ¼ oz apricot liqueur (prefer Giffard)
· ¼ oz simple syrup
· 2 oz dry cider
· GARNISH: mint sprig
Build all ingredients. Fill with ice and garnish with a mint sprig.
